Honey-Pecan Kiwi Salad
5 cups Boston lettuce or Spinach (torn)
3 Kiwis (peeled and sliced)
1/4 cup Pecans (toasted)
1 tblsp. HONEY
2 tblsp. Vanilla Yogurt
2 tblsp. Lemon Juice
1 tblsp.Olive oil
* In a large bowl, combine the lettuce, kiwis and pecan.
* In small bowl, mix the HONEY, yogurt, lemon juice and olive oil, until smooth.
* Pour over salad
* Serve Immediately. I like to use cashews in my salad.
